It's Margarita O'Clock - When Mama doesn't want a Mocktail

Every now and then, us moms need to take a load off, kick back with friends and pour ourselves a stiff one. I’ve been experimenting with a margarita recipe that a fellow mama shared a while back, and it’s too good to keep all to myself.

Although suggested measurements are below, you should play with the ingredients to your taste. You might not prefer a spicy margarita (in which case we might not be able to be friends). But if so, just remove the jalapeno. Feel free to mix this one up exactly as you like. This is my gift to you for being a great mom (or dad!).

The Mango Cucumber Jalepeno Margarita (NOT A MOCKTAIL)

  • 1 cucumber, chopped

  • 1 jalapeno, thinly Sliced

  • Mango chunks 

  • Lemon / lime / orange freshly squeezed

  • Trader Joe's Margarita Mix (optional)

  • Garnish with a sprig or two of cilantro

  • 100% Agave Tequila (I use a 2:1 ratio of mixer to Tequila)*

Add the cucumber and citrus juices to a pitcher and muddle. Add remaining items with a few cupfuls of ice and let marinate in the fridge for 20 minutes, stirring a couple of times. Pour over salted rim glasses filled with more ice.

Drink up, friends. It’s Margarita o’clock somewhere!
